The Applications category can be used for any GNOME application, even without a tag.

I thought it was an app group, not one particular app.
It seems to not being provided with Ubuntu, because I have “snap store” instead.

Is there sth to explain tags, like “About the * category” topics for categories?

No; tags are meant to be self-explanatory and optional.

If you don’t know how to categorise a topic, don’t add a tag; people with a high enough trust level will tag the topic later. Even mistagged topics will be retagged, so it’s not a huge deal.
