When I enable Files, Contacts and Calender I can access the Sync’d info I can see for example my Google Drive contents.
But were do I find sync’d mail? Is there a mail client I need to install?

mail clients use gnome-online-accounts. There may be more.
GNOME Online accounts is just a mechanism to authenticate you with services; some applications can use Online accounts to avoid handling the authentication itself.
Evolution and Geary can use GNOME Online accounts, though Evolution also allows direct authentication.

Evolution is a mail client, and will use the account you set up with GNOME Online accounts to connect to GMail and access your email.
Works, thanks! As soon as I installed Evolution, it started download all email.
