not sure if we have an overview page for this, but you could check for the available versions via the CLI:
flatpak install flathub org.gnome.Sdk

Keep in mind that everything but the 3.38 and 40 SDKs are EOL by now though.
There’s also the nightly SDK from gnome-nightly
remote, which ships the latest versions.
