Where are Evolution account details/password stored?

Using Flatpack 3.56.2 on Linux Mint 22.1 Cinnamon

When I open the Evolution application, it automatically asks me to log into my old email address. I want to start afresh, so I uninstalled the application through:

flatpak uninstall --delete-data Evolution

But when I reinstalled, the prompt asking me to sign into my old email still appeared.

I also tried deleting the Evolution folder in the .var folder.

I checked passwords and keys application (GnuPG keys) and my email details weren’t there either.

I know I can still log into a different email account, but I’d still like to know where the passwords are saved for the sake of clarity and security.

(edit 1: Also, it’d be good to know if it’s possible to enable automatic login while storing the password somewhere else, for example, a password manager application such as Bitwarden?)
(edit 2: I had to remove some incorrect info added in edit 1 whereby I thought I found it. I also tried sudo apt purge Evolution, and still, when I reinstall and open the application, my old email address pops up, prompting me to insert password.)

Passwords are handled by the Gnome Keyring, not by Evolution itself.
You can check the contents using Seahorse (though I’m not sure how this
works with the Flatpak version; I’ve never used it).

when you open either Edit->Accounts or Edit->Preferences->Mail
Accounts, you can see all the configured accounts you have. I suppose
your old email account comes from GNOME Online Accounts (GOA), because
from what you described I cannot see many other options. You can delete
a GOA account in the system Settings (gnome-control-center)->Online
Accounts, or you can disable the mail part for it there.

By the way, saved password does not mean using it. To have the account
a definition of it needs to be somewhere. GOA accounts are configured
automatically, it’s intentional.
