I have a question: I would like my emails to be available offline always, by default, also new/unread ones. I am aware of the manual button “download messages for offline use”, but is there a way to enable this by default, always?

it’s in Edit->Preferences->Mail Accounts->->Edit->Receiving

Correct, it’s it. If I recall correctly, it used to contain an “offline” word, but it had been changed, because it sounded too techy or something like that. Check the user documentation I provided a link to above.
