Wouldn’t that be confusing to use?
The current implementation makes sure that the pages are mimicked as in a physical book (page 19 will be always on the right, in above example), and that helps with muscle memory picturing the book page layout when revisited. Page 19 appearing on left and right will cause confusion, though it could help in a few niche use cases.

app is replaced by Papers as the default document viewer from GNOME 49.
There is a request for a continuous horizontal view: Horizontal continuous view. (#1018) · Issues · GNOME / evince · GitLab. This could be the non-continuous version.

Oops! A non-continuous version would only display one page at a time, so this is the continuous horizontal view for this case.

Yes. This issue was reported 20 yeas ago.
The physical book its physical limitations. That’s why we invented e-books. And this issue fully explains the reason. So, is it possible to provide an option? A special shortcut key?

This view has to be implemented and certainly require design (to switch to it). See with the developers what the priority of this is, if it needs someone to develop it.
