Hi, under Settings > Privacy you can turn off file history.
The list of recently used files is stored in your home directory, so in order to “leak” it would need to be accessed by something that has access to your home directory. If something has access to your home, it can do a lot more than accessing the list of recently used files.

No, it’s not “better”: recent files are a system level feature, and have nothing to do with Nautilus.
Create a new user for them, instead of giving them access to your user and your files. If you have things you don’t wish other people to see, don’t give that people access to your files.
