I use gedit for rough notes. I like reasonably sized letters.
My daughter uses it fullscreen to practice typing. She likes gigantic letters.
Switching is ~7 clicks, but ctrl [plus/minus] are well known shortcuts for similar actions across many applications.

don’t forget Ctrl+0
to reset the size
BTW, gnome-text-editor does all this.
