I came across entries which are outdated / obsolete, but still listed in ports.macports.org
.
E.g.
https://ports.macports.org/port/gnome/details/
Should we remove them ?

You should ask the macports packagers.
The idea behind the question was:
Does GNOME have some control / responsibility over the GNOME apps / packages listed in macports.org
(something like flathub app list monitoring), since it represents GNOME branding in a way ?
No, GNOME does not have any control/responsibility for downstream packagers; that’s entirely on the downstream to conform to the GNOME branding guidelines.
