How do I control the output device for a specific application?
Settings > Sound > Volume Levels > Spotify > change output from Speakers to Headphones

Say for example, I launch Spotify up and want to play that in my speakers, but still wear my headphones while I’m in discord using voice chat with my buds?
pavucontrol will let you do that. It’s in most distros repositories. Works with Pipewire as well.

Additionally Discord itself lets you set explicit input/output devices in it’s own settings
