Question: how to set sink for gnome-network-displays from command line

This is a question (or perhaps a feature request): How do I select the sink for gnome-network-displays through the command line? I want a script to do this. I want to be able to start up without any menus and mouse clicks. Is there an environment variable or a command-line option? If not, can someone give me high-level guidance? I am willing to hack a custom version for myself that hardwires a specific sink. Where in the code can I do that? I am an experienced dev, but not with GNOME or the GTK framework
