After each click on the launchpad, it disappears.
Is there an option of “always on” so that you can launch multiple apps quickly?
You can hold Ctrl to keep it open after clicking app icons. That also opens a new window with each click if you want to open multiple windows of an app.

Good to know, thanks. This involves one extra step, holding CTRL. Is there a way to set the launchpad to be always on by default?

No, there’s no such setting.
You can also drag-and-drop app’s launchers (from the dash or apps grid) into workspaces to open them into various workspaces one after another; with that method, you only need the mouse, no keyboard Ctrl key needed.
