When going to Help –> Contents, the screen shows garbage in the contents window in that it is just a bunch of broken lines with nothing readable. An older version bundled with Bookworm on my laptop works fine.

that might be something with Yelp, which shows locally installed user
documentation (help) files, or with WebKitGTK (which Yelp uses), maybe
some font setting (which WebKitGTK depends on) or something broke with
the way your distro generates the help files (though I guess it’s
unlikely). Try to ask the distro maintainers, Evolution itself cannot
do much about it (unless it would be broken in all distros, which is
unlikely, due to the age of the Evolution version you use).
I tried on Fedora 42, which has similarly old versions, specifically
evolution-3.56.2-2.fc42, webkit2gtk4.1-2.50.1-1.fc42 and
yelp-42.3-1.fc42, and it shows the help Contents just fine.
